Mutton Biriyani
Here's
a delicious recipe for Mutton Biryani:
Ingredients:
For the Mutton Marinade:

500 grams mutton, cut into pieces
- 1
cup yogurt
- 2
large onions, thinly sliced

2-3 green chilies, slit
- 1
tablespoon ginger-garlic paste
- 1
teaspoon red chili powder
- 1
teaspoon turmeric powder
- 1
teaspoon garam masala

Salt to taste

Fresh coriander leaves, chopped

Fresh mint leaves, chopped

Juice of 1 lemon
For the Rice:
- 2
cups basmati rice
- 4
cups water

2-3 whole cloves
-
2-3 cardamom pods
-
1-2 bay leaves
- 1
stick cinnamon

Salt to taste
For Cooking:

3-4 tablespoons ghee or oil
-
Fried onions for garnish
-
Boiled eggs (optional)
Instructions:

**Marinate the Mutton:**
- In a large bowl, combine mutton pieces with yogurt, sliced onions,
green chilies, ginger-garlic paste, red chili powder, turmeric powder, garam
masala, salt, chopped coriander and mint leaves, and lemon juice.
- Mix well and let it marinate for at least 1-2 hours, preferably
overnight in the refrigerator.

**Prepare the Rice:**
- Rinse the basmati rice under cold water until the water runs clear.
Soak in water for about 30 minutes, then drain.
- In a large pot, bring 4 cups of water to a boil. Add whole cloves,
cardamom pods, bay leaves, cinnamon, and salt.
- Add the soaked rice and cook until it's about 70% done. Drain the rice
and set aside.

**Cook the Mutton:**
- In a heavy-bottomed pot or pressure cooker, heat ghee or oil. Add the
marinated mutton and cook on medium heat until the mutton is tender.
- If using a pressure cooker, cook for about 2-3 whistles; if using a
pot, cover and simmer until cooked through (about 30-40 minutes).

**Layering:**
- Once the mutton is cooked, spread half of the cooked rice over the
mutton. Then layer it with the remaining rice.
- You can sprinkle some fried onions, additional garam masala, and a few
mint leaves on top.

**Final Cooking:**
- Cover the pot with a tight lid. You can also seal it with dough to trap
the steam. Cook on low heat for about 20-25 minutes to allow the flavors to
meld

**Serve:**
- Gently fluff the biryani with a fork before serving. Garnish with fried
onions and boiled eggs if desired.
- Serve hot with raita or salad.
